The term “Knickerbockers” traces its origin to the Dutch settlers who came to the New World – and especially to what is now New York – in the 1600s.
Specifically, it refers to the style of pants the settlers wore…pants that rolled up just below the knee, which became known as “Knickerbockers” or “knickers”. Since then, the term “Knickerbocker” became indelibly linked to anything and everything New York!
The founders of Knicker+Bockers Pizza were inspired by the widespread popularity of a new concept of pizza restaurants in the US, particularly in New York and California which offer high end artisanal pizza where customers literally design their own pizza rather than be restricted to a fixed menu. The pizza is just thin enough to be crispy, yet thick enough to be filling. They also noticed that this unique concept was very popular with the millennials that desire products of premium quality at affordable pricing.
